Springtime is March Madness time! While watching the games you need the perfect snacks to munch on while you root for your favorite teams to win! That’s why springtime is pretzel time. These homemade pretzels are fairly easy to make, and are the perfect snack for game time!
How to Make Homemade Pretzels and Cheese Sauce
Prep Time: 30-45 mins
Rise Time:50 mins
Cook Time: 30 mins
Total Time: About 2 hrs

Homemade Pretzels

You will need:

  • pretzel salt
  • 10 total cups of water
  • 1 1/2 cups warm water approximately 100- 115 degrees F)
  • 1 large egg yolk beaten, and mixed with 1 tbsp of water
  • 2/3 cups o baking soda
  • vegetable oil
  • 1 package of active dry yeast ( or 1 tbsp)
  • 2 ounces of melted butter
  • 4 1/2 cups of all purpose flour

Directions
Step One: Put the water, sugar, and kosher salt into a mixing bowl. Mix thoroughly.
Step Two: Sprinkle the active dry yeast on top, and lightly mix.
Step Three: Let the mixture sit for around 5 minutes. You are looking for the mixture to begin foaming.
Step Four: Add in the flour and butter. Knead the mixture until the dough is smooth. Do this for about 5 minutes.
Step Five: Once the dough is kneaded, remove from the bowl. Put about a tablespoon of oil in another bowl equal in size, and spread the oil. Then, place the dough in the bowl.
Step Six: Cover bowl with plastic wrap, and let rise in a warm area for about 50 minutes. You want to wait until the dough has doubled in size.
Step Seven: Preheat oven to 450 degrees F.
Step Eight: Bring the 10 cups of water to a rolling boil. Add in the baking soda prior to boiling.
Step Nine: Roll out the dough into 8 24 inch ropes onto a lightly oiled pan. Then, fold each rope into a U shape, and cross over each end. Press down to ensure the dough holds its shape.
Step Ten: Place each homemade pretzel in the boiling water for exactly 30 seconds,k then take out immediately and place back onto the pan.
Step Eleven: Once done, brush each pretzel with the egg yolk mixture, and sprinkle with pretzel salt.
Step Twelve: Let bake for 11-15 minutes until golden brown.

How to Make Homemade Pretzels and Cheese Sauce

Spicy or Mild Cheese

Prep Time: 10 min
Cook Time: 15 min
Total Time: 35 min
You will Need:

  • 4 ounces shredded sharp cheddar cheese
  • 1 tbsp butter
  • 8 ounces shredded smoked cheddar cheese
  • 1 diced shallot
  • 3 tsp yellow mustard
  • 4 ounces cream cheese (softened and cubed)
  • 1-2 seeded and diced jalapenos peppers
  • 1 tbsp cornstarch
  • 2 chipotle chiles, diced
  • 1 1/2 cups half and half

Step One: Get out a medium pot, and place over medium heat.
Step Two: Saute the butter, shallots, and garlic in the pot for 3-4 minutes. If you want spicy sauce saute the jalapeno peppers as well. If you want mild sauce leave out the jalapeno peppers.
Step Three: Next, add in the half and half. If you want spicy sauce add in the chipotle peppers as well. However, if you want mild leave the chipotle peppers out.
Step Four: Whisk in the cornstarch.
Step Five: Wait for the mixture to come to a simmer, and then lower the heat to medium-low.
Step Six: Stir in the mustard, and cubed cream cheese.
Step Seven: Add in the shredded cheese slowly while stirring.
Step Eight: Serve once all of the shredded cheese has melted in.
Step Nine: Serve cheese hot with the oven baked pretzels and enjoy!
