Bobby Flay Olive Oil Brownies with Toasted Bread Crumbs are the BOMB

If you are like most of us, you probably made a New Year’s resolution to drop a few pounds and work out a little more to get back into shape. If you have ever tried different diets you already know how hard it is to stick with any one of them when they restrict the foods you can eat, taking the delicious treats away that make you happy.

Chef, restaurant owner, TV personality, and NY Times bestselling author, Bobby Flay has a secret for how to be healthy, fit, and not feel deprived. His newest cookbook “Bobby Flay Fit” is a compilation of 200 recipes that don’t eliminate your favorite foods. Instead, he tweaks the recipes so that they are healthier versions of the classics and still packed with flavor. The book also highlights some of Bobby’s own fitness tips. In case you haven’t noticed, Bobby is quite slim.

Chef Flay includes leaner protein dishes, plenty of whole grains, hearty salads, breakfast bowls and smoothies, and delicious healthier desserts. My personal favorite is his recipe for Olive Oil Brownies with Toasted Bread Crumbs. For this recipe, he takes his cue from the Mediterranean diet that includes extra virgin olive oil as a staple healthy fat used in both savory and sweeter baking dishes. EVOO replaces the majority of the butter without sacrificing richness and flavor. There is only ½ cup of flour, allowing for a fudgy texture with less carbs. A bit of espresso powder really amps up the unsweetened and bitter sweet chocolate base, making the dish rich in antioxidants. The brownies are topped with crunchy EVOO toasted bread crumbs.

I laid my dad to rest today. Although our relati I laid my dad to rest today. 

Although our relationship has been strained over the past 14 years, he was still my dad.

He instilled values in me that I have carried into adulthood and continue to pass down to my family. 

He showed me how to care for and appreciate my wife in such a way that she knows I love her.

He taught me life lessons that I have been able to teach my own children.

I wish we could have had a more meaningful relationship so that he (and my mom) could have experienced my life, my family, with me, but I’m grateful for the time we had. 

He’ll always be my dad and that seems like enough right now.
