McHenry 10 Year Old French Oak
McHenry is a popular name in Tasmanian whisky, and it’s easy to see why. The delicate whisky loses a little of its alcohol than other Tassie whiskies during maturation, which helps to create a fantastic complexity.
The nougat, pistachio, and chocolate swirl together, but the rich oak helps cut through the sweetness and prevents it from being too sweet to drink. The single malt has been maturing for years, enhancing its flavour and making it a wonderful whisky to enjoy.
Character
Colour: Golden with ruby hues
Nose: Pistachio, blackberry, porridge, and nutmeg
Palate: Spiced nougat, scones with blackcurrant jam and cream, and Swiss milk chocolate
Finish: Sweet blueberry pie, creamy mocha, rich vanilla, and oak

Waubs Harbour Rusted Casks
Waubs Harbour Rusted Casks uses Apera Sherry finish oak casks before finishing in two rusted American oak casks that are matured over Waubs Harbour’s live saltwater tank. Unlike others on the market, the whisky’s oiliness is kept intact through non-chill filtration. Combined with the rich spiced oak and syrupiness of the poached pair, you get to experience flavours we don’t often see in whisky, all while enjoying its delicious colour, too!
You might think that it sounds overly sweet, but the salt cuts through the caramel to remove any excess sweetness, retaining a classic whisky taste.
Character
Colour: Searing bronze
Nose: Honeycomb, orange zest, stewed apricots, salted caramel, and spiced oak
Palate: Poached pear with salted caramel sauce, thick cream, and peanut brittle
Finish: Salted lime, burnt brown sugar, creme fraiche, and stewed fruits
Food: Best enjoyed without food
